Red White and Blue Popsicles

Show your patriotic spirit and enjoy a sweet frozen treat for the 4th of July or Memorial Day with these red white and blue popsicles. Made with just a few ingredients, including fresh strawberries, these patriotic popsicles are are fun and easy to make.

Ingredients
  

  • 1/2 c fresh strawberries, finely chopped or blended
  • 2 c heavy whipping cream
  • 1 tsp berry-flavored stevia
  • 1 tsp vanilla stevia
  • A few drops of blue food coloring

Method
 

  1. In a large mixing bowl, whip the heavy cream until soft peaks form.
  2. Divide the whipped cream evenly into three separate bowls.
  3. Leave the first portion plain – this will be your white layer.
  4. In the second portion, stir in a few drops of blue food coloring and the vanilla stevia until the color is evenly distributed.
  5. In the third portion, fold in the blended or finely chopped strawberries along with the berry stevia for a naturally sweet red layer
  6. Start layering into popsicle molds:
  7. First, pour in the blue cream layer. Tap the molds gently to level it. Freeze for 20 minutes to set.
  8. Next, add the plain white cream. Again, freeze for 20 minutes.
  9. Finally, add the strawberry mixture as the top red layer.
  10. Insert popsicle sticks and place the molds in the freezer for at least 4–6 hours, or until completely frozen.
  11. To release the popsicles, run the molds under warm water for a few seconds.
