Ingredients

  • 2 cucumbers sliced into rounds
  • 2 green bell peppers cut into rings
  • 1 red bell pepper sliced
  • 1 yellow bell pepper with the base sliced off for the “head”
  • 1 cup cherry tomatoes halved
  • 1 cup broccoli florets
  • 1 cup celery sticks trimmed
  • 1/3 cup sour cream or mayonnaise
  • Candy eyes

Equipment

  • Large serving platter or wooden board
  • Sharp knife
  • Small bowl or spoon (for sour cream)
  • Paper towel (for drying vegetables)

Method

  1. Prepare the base: Spread a thin layer of sour cream or mayonnaise on a large serving plate to help hold everything in place.
  2. Create the turkey head: Slice off the base of the yellow bell pepper and position it at the center bottom of your tray.
  3. Add facial features: Use a dab of sour cream to attach the candy eyes. Add a small strip of orange or yellow pepper (or carrot) for the mouth. Place a thin piece of red pepper as the wattle hanging down.
  4. Build the feathers:
  5. Start by arranging broccoli florets in a semicircle around the “head.”
  6. Next, add a ring of green bell pepper rings.
  7. Follow with yellow pepper strips above that layer.
  8. Add cucumber slices next.
  9. Finish with celery sticks as the outer feathers.
  10. Fill the gaps: Tuck in halved cherry tomatoes to add color and dimension.
  11. Final touches: Adjust spacing, and if you like, place a small bowl of dip next to your turkey for easy serving.
  12. Serve immediately or refrigerate until ready to display.

Notes

  • To make this toddler-friendly, omit the candy eyes and cut vegetables into small, soft pieces for easy chewing.
  • For a spicier twist, mix a little chili powder into the sour cream or serve with a zesty hummus dip.
  • Great for holiday potlucks or classroom parties — it’s a crowd-pleaser that travels well!
